A walk thru tonight’s dinner and our new clean eating journey. I have been reading, and quickly learning clean eating means something a little different to everyone. What you will need…
- Soy Milk
- Brown Rice Flour
- Ground Flax Seed
- Almond Oil
- Himalayan Salt
Wash, dry and slice eggplant into thin circles. Poke holes and then press pieces into flour. Once finished place into freezer for 10 minutes.
While in freezer, mix squash, zucchini, Himalayan salt and almond oil in a small frying pan and place on low heat, until the eggplant is prepared (15 minutes).
Dip eggplant into soy milk then into flour mixture ( mix flour, flax seed and chia seed). Place into large frying pan with almond oil. Once browned flip sides. Pieces will fall off and that is so normal.
Once finished lightly salt and place on paper towels to cool (5 minutes) then serve.
